Northern Vietnamese-style rice vermicelli, slightly firmer than southern noodles so it holds its shape in light broths. Made from just rice flour and water, it is the noodle for bun cha, fresh spring rolls and hot pot, and works just as well in Filipino pancit bihon-style dishes.
