Mama Sita's Sinigang sa Sampalok Mix (Hot) 50g

Sinigang is the sour soup that anchors a Filipino dinner table, and the sourness comes from sampalok, unripe tamarind. This is the hot version of Mama Sita's much-loved sachet, with chilli powder worked into the tamarind so the broth finishes with a proper kick.

One 50g sachet does the job of a whole afternoon of boiling down fresh tamarind pods. Use it for sinigang na baboy, na hipon or na isda, with plenty of kangkong, radish, okra and long beans.

Ingredients:
Tamarind Powder, Iodised Salt, Citric Acid, Flavour Enhancer (E621), Tomato Powder, Rice Flour, Chilli Powder 4%, Cane Sugar.

No major allergens are listed in the ingredients. A UK retailer listing for this pack adds that it may contain traces of wheat, fish, peanuts, soya and milk.

How to use:
Bring water or stock to the boil, add your meat, fish or prawns and cook until nearly done. Stir in the mix, add the vegetables and simmer until tender. Serve hot with steamed rice. Start with part of the sachet and taste as you go, as the mix is very concentrated.

Storage:
Store in a cool, dry place. Once opened, seal the sachet or transfer to an airtight container and use promptly.
