Royal Umbrella is the jasmine rice a lot of Thai and Filipino households treat as the default, long grained and gently fragrant with that pandan-like scent that fills the kitchen as it steams. Thai Hom Mali is grown mainly in the northeast of Thailand and is the rice you want under a curry or alongside grilled fish. The 1kg bag is the sensible size for a small household.

How to use:
Rinse the rice in cold water until the water runs clear. Use 1 part rice to 2 parts water, bring to the boil in a heavy based pan, then reduce the heat, cover and simmer gently for 15 to 20 minutes until the grains are tender and the water is absorbed. Leave covered for a few minutes and fluff with a fork before serving. It is also lovely cooked with coconut milk.

Storage:
Store in a cool, dry place away from direct sunlight. Once opened, keep in an airtight container.
