Glutinous rice, malagkit, the short opaque grain that turns sticky and chewy rather than fluffy. It is the whole foundation of Filipino kakanin, so biko, suman, palitaw and bibingka all start here, and it is equally at home as Thai sticky rice beside grilled meat or under sliced mango.

Allergens:
No allergenic ingredients. Despite the name, glutinous rice contains no gluten.

How to use:
Rinse the rice in cold water until the water runs clearer, then leave it to soak overnight. Drain, and steam until the grains are translucent, tender and sticky. For Thai sticky rice with mango, fold warm coconut cream through the cooked rice and serve with fresh mango slices. For Filipino kakanin, follow your own recipe from the soaked or ground rice.

Storage:
Store in a cool, dry place away from direct sunlight. Reseal or decant into an airtight container once opened.
